My family comes from Italy and I traditionally make for Easter what my Mom used to make for me as a young adult. The menu would consist of Lamb, asparagus, roasted potatoes, rolls, Easter bread, pizza rustica, and ricotta cheesecake.
2 package pie crust
1 lb dry sausage
1 lb mozzarella cheese
1 cup parmesan cheese
Put Pie shells together. Mix all ingredients and pour into shells. Bake 375 for 15 mins till
Braided Easter Bread
2 package yeast ½ cup warm water
½ cup butter
¾ cup milk
½ cup of sugar
2 eggs beaten
1 ½ tsp salt
5 cups flour
6 soft boiled dyed eggs
1 tsp water
In bowl dissolve yeast and warm water. Melt butter in a pan, add milk and heat till warm. Pour the mixture into the bowl with yeast. Add sugar eggs and salt and stir. Mix in flour one cup at a time till soft dough is formed. Turn dough onto a floured surface and knead until become elastic. Place in an oiled bowl cover and set in warm place for about one hour. Punch down dough and divide into 3 pieces. Roll each piece into a 20-inch strand and braid together. Place on greased cookie sheet tucking the end under. Sink the eggs into the dough and cover and let rise until double. Bear 1 egg with 1 tsp water and brush on dough. Bake in oven 350 for 25 mins.
Onion and Mustard-Coated Leg of Lamb with Ginger-Rosemary Gravy
7 lb bone-in leg of lamb
1 2/3 cups chopped onion
3/4 tsp each salt and pepper
½ cup mustard
3 cloves of garlic cut in 12 thin slices
¾ cup red wine
3 Tbsp rosemary or 1 Tbsp dried
2 Tbsp minced ginger
3 Tbsp flour
3 cups chicken broth
Heat oven to 325 Put the lamb in roasting pan. Cut 12 slits in lamb and insert a slice of garlic in each slit. Sprinkle ½ tsp each of salt and pepper all over the lamb. In small bowl mix onion, mustard and 2 Tbsp rosemary. Spread all over the lamb. Toast 2-3 hours. Remove to a serving platter, cover loosely with foil to keep warm let stand while making gravy. Pour wine into roasting pan and stir to pour fat and drippings into a bowl let stand until rat rises. Spoon 2 tbsp fat into roasting pan discard rest. Place pan on 2 burners over med heat. Add ginger and stir. One minute. Whisk in flour and cook one min whisk in drippings chicken broth and remaining rosemary. Bring to boil and reduce to low and simmer 5 mins.

- 6 large eggs
- 1 teaspoon pure vanilla extract
- 1 tablespoon orange zest
- 2 lbs whole milk ricotta cheese
- 1/3 cup of flour
- 1/4 tsp salt

Preheat oven to 325 degrees. Set rack in the middle of the oven.
Prepare pie crust and cover with lattice pie cover.
In a medium bowl, sift sugar and flour.
In a large bowl, combine ricotta and zest and whisk until smooth. Add sugar and flour mixture and gently mix to combine.
Add eggs, 1 at a time, and whisk to combine. Add the vanilla and salt.
Pour batter into the prepared pan. Bake in the center of the oven for about 55 to 60 minutes, until a light golden color. Make sure the center is fairly firm and the point of a sharp knife inserted in the center comes out clean.
Cool completely on a wire rack. Cover with plastic wrap and transfer to refrigerator until chilled, at least 2 hours.
